Try parsnip cakes instead of potato cakes.
They are marvellous served hot with crisp bacon and/or fried tomatoes for breakfast,
My son and I are giving ourselves a challenge to follow the WWII Rationing of food with the guidelines from the Ministry of Food. We will also be learning about other aspects of life during this time in history. It will be a great learning exercise for my son whom I homeschool and will be fun too.
It may not be rationing, but it's the right time of year for this;
ReplyDeletepeel, chop, and boil lots of parsnips. Let the water reduce so there's a tbsp or two left when the parsnips are cooked - much of the flavour is there.
Pour the parsnips and remaining water into a blender.
Add lots of cream, blend well (cream should start to thicken)
Scoop back in the bowl, reheat and boil gently while stirring for a few minutes, add salt and pepper to taste.
Serve under salmon or steak.
